Add sliced ginger, white onion and cooking wine to clear water and bring to a boil

Place the hairy crabs in the steamer

Steam over high heat for 20 minutes, during which time the ginger, sugar and vinegar are stirred together to make a sauce

Serve directly from the pan or drizzle with sauce for a different flavor
